Comments: Sanitizer levels in bucket were 200 ppm. All had been used, debris was observed in bucket. Levels in bucket must be maintained at 100 ppm for chlorine. Clean dishes were observed uncovered and not inverted. Clean utensils in container were all facing different directions. Keep clean plates covered or inverted so as to prevent contamination. Keep utensils with handles in the same direction to avoid contamination when reaching for utensils. Avoid stacking meat too high to allow for quick cooling and maintain 41 degrees or lower. Steak piled high in reach-in had a higher temperature than single stack of steak just above in another rack.

Blender was observed in vegetable prep sink. Kitchen staff was also observed rinsing refillable cup after pouring its content into vegetable prep sink. Vegetable prep sink can only be used for vegetables. Do not use for any other purpose.
