Ice was used to rapidly cool the ham, cooked mushrooms, cut tomatoes and cheese until the unit can be repaired. Also bring walk-in down to 41 degrees or below. Potentially hazardous food was at 44 degrees. Grits in back at 109 degrees. The steam unit was low on water and there was a compartment without lid. The grits were discarded. Person in charge must ensure that the steam unit is used correctly. Clean food debris from under the dish machine. Observed several flies in the facility.

The hand wash sink must be accessible at all times. Prep cooler potentially hazardous food at 48-49 degrees. The unit was adjusted down. Sushi display potentially hazardous food at 47-48 degrees on ice blocks and could not be adjusted. The potentially hazardous food was placed in another cooler holding at 40 degrees. Plastic trays were used on the ice blocks. Ceramic plates may help to hold at correct temperature of 41 degrees or below. Dry goods stored on floor. All food storage must be six inches off floor. Employee preparing food without hair restraint. Corrected on-site. Wet wipe cloths not in sanitizing solution. Also sanitizer was at 0 ppm. Corrected on-site. The inside and handles on most of the cooling units should be cleaned. Clean floor in walk-in cooler.
