Restaurant report card — Whitfield County

The Daily Citizen

— Whitfield County Environmental Health conducts inspections of restaurants every three months. The inspectors may require a re-inspection. Restaurants are required by law to post their most recent inspection permit.

The Daily Citizen lists areas where the establishments are out of compliance with the regulations.



Blue Ridge Elementary School, 100 Bogle St.

Comments: Chicken cooling on counter at 110 degrees in a large container packed. Person in charge stated that it had been there for 45 minutes. When cooling, once the potentially hazardous food reaches 135 degrees, it must actively be cooled from 135 degrees to 70 degrees within two hours, then four more hours to 41 degrees. It should be in a shallow container. The chicken was placed on sheet pans and placed in cooler.



Southern Smoke BBQ, 3440 Cleveland Highway

Comments: Need thermometer in prep cooler. Sanitizer for wiping cloths at 0 ppm chlorine. Must be 50 to 100 ppm. Change sanitizer more frequently.



Hamilton Medical Center, 1200 Memorial Drive

Comments: Beverage dispensing nozzles extremely soiled. Clean nozzles more frequently. They were pulled at time of inspection to be cleaned. Several cooler gaskets in bad repair. Replace ASAP. Most equipment in the facility should be cleaned on the outside and handles.



Gill’s Grill, 1511 Abutment Road

Comments: Chemical bottles not labeled. All chemicals must be labeled with the common name of the product. Observed flies in the kitchen. Person in charge must ensure flies are controlled.

Comments: Food “cooling” in deep containers with tight wrap/lids. To cool rapidly, use shallow containers, do not cover, ice bath, coldest part of unit, etc. Sanitizer too strong in buckets. Maintain 200 ppm. Change gloves when changing tasks.



Steak & Shake, 1250 W. Walnut Ave.

Comments: Cheese at 45 degrees. Hold potentially hazardous foods at 41 degrees or lower. Spaghetti at 55 degrees, 46.5 degrees after “cooling” for 24 hours. Must cool to 41 degrees in six hours.



El Pollo Alegre, 323 Grimes St.

Comments: Potentially hazardous foods in walk-in cooler at 45 degrees. The walk-in was adjusted down at time of inspection. Smoked chicken sitting on top of steam table at 110 degrees. It was not actually in the unit. Owner stated that it had been there less than an hour. It was rapidly reheated to 165 degrees and placed in steam table. Vents in walk-in cooler and dessert cooler should be cleaned to remove what appears to be “mold.” The outside of bulk storage containers should be cleaned to remove.



Waffle House, 1912 Chattanooga Road

Comments: Grits in back at 101 degrees. Must hold at 153 degrees or higher. The grits were discarded. The steam unit was broken and not hot. Do not use this unit for hot holding. Clean floor under dish machine and in the walk-in cooler. Observed roaches under dish machine. Manager stated pest control had been here previously. Ensure pests are controlled. Cleaning food debris from under dish machine should help.
