When cooling, once the potentially hazardous food reaches 135 degrees, it must actively be cooled from 135 degrees to 70 degrees within two hours, then four more hours to 41 degrees. It should be in a shallow container. The chicken was placed on sheet pans and placed in cooler.

Comments: Potentially hazardous foods in walk-in cooler at 45 degrees. The walk-in was adjusted down at time of inspection. Smoked chicken sitting on top of steam table at 110 degrees. It was not actually in the unit. Owner stated that it had been there less than an hour. It was rapidly reheated to 165 degrees and placed in steam table. Vents in walk-in cooler and dessert cooler should be cleaned to remove what appears to be “mold.” The outside of bulk storage containers should be cleaned to remove.

Comments: Grits in back at 101 degrees. Must hold at 153 degrees or higher. The grits were discarded. The steam unit was broken and not hot. Do not use this unit for hot holding. Clean floor under dish machine and in the walk-in cooler. Observed roaches under dish machine. Manager stated pest control had been here previously. Ensure pests are controlled. Cleaning food debris from under dish machine should help.
